Pumpkin Pie

‘Tis the holiday season, and who doesn’t love to enjoy holiday foods that aren’t as easy to find ingredients for during non holiday months. What is one staple food that you can almost always count on enjoying, and loving for that matter, at any holiday meal? Pumpkin Pie! With its wonderful texture that just melts in your mouth, and the combination of seasonings that stay on your tongue, it really is something special that is hard to replace. Ah ha! I have found that replacement, and guess what…it’s healthy- and easy! I got the recipe from Hungry Girl, it’s titled “Wayne’s Pumpkin Smash, I call it Guiltless Pumpkin Pie. Be advised, it takes NO TIME to make and NO TIME to eat!

Guiltless Pumpkin Pie

Ingredients

  • 1 can pure pumpkin
  • 1/2-3/4 cup egg substitute (use less for a stickier consistency, and more for a custard like consistency)
  • 1/2 sugar substitute
  • 3 tbsp pumpkin pie spice
  • 2 tbsp cinnamon

Directions

Preheat the oven to 350 degress.Add all ingredients to a large mixing bowl. Stir until blended very well. Pour into a pie dish. Bake for 40-45 mins. Enjoy!!
