Pasta Lover?

You may have noticed now that Hungry Girl is one of my favorite cookbooks. I promise, it is really worth it to invest in at least one of her cookbooks because you wouldn’t believe what cool alternatives you will find! Quite possibly my absolute favorite alternative is tofu noodles, “Shirataki.” Be advised, when you open the package it smells HORRIBLE. But the cooking process makes them taste nothing like their smell. Also note that at Whole Foods they are only $2.49 (and might I add 35cals per pack! Hold up!!) Think about that…that isn’t bad!! Here is a recipe I enjoy:

Shrimp Queso Angel Hair

Ingredients

1 pack Shirataki Angel Hair Noodles
1/2 lb (or whatever you prefer) devined, shelled shrimp
1 medium sized yellow onion
1 can reduced sodium tomatoes (I enjoy the basil, garlic and oregano version)
1 cube laughing cow queso fresco cheese
Garlic to taste
Lemon juice to taste
Oregano to taste
Red pepper flakes (if you like a little kick!)
Pam Olive Oil Flavored Cooking Spray

Directions

Drain the pasta and rinse thoroughly. Boil in at least 4 cups of water (you want to get that smell outta there). While the pasta is boiling, sauté the onions in Pam spray. Once almost done cooking add the tomatoes and shrimp. Cook until shrimp are browned. Drain the noodles and stir in cheese. Then add the onions, shrimp, tomatoes and spices. Eat and feel not guilty!!
