Alternative Shrimp Scampi

Everyone knows of many traditional, usually delicious, pasta recipes, and in the year 2012- when people really begin caring about their health- they also know how horrible most of these dishes are for you. While searching through my cookbooks, making my menu for the week, I found a very simple shrimp scampi recipe in my Weight Watchers cookbook. Obviously, I have to put a spin on it, otherwise it isn’t mine! If you are not aware, your typical shrimp scampi uses butter, and white wine- but not mine! This was quite possibly one of the easiest recipes I have made yet, and by no means did it lack in taste. Give it a shot!

SPICY SHRIMP PENNE

Ingredients

  • 1lb bag frozen shrimp – I use deveined, tails on
  • 1 medium yellow onion
  • 1 can tomatoes- I use “no salt added” basil, oregano, garlic. DO NOT DRAIN
  • 2 slices laughing cow cheese- I use sun- dried tomato and mozzarella
  • ½ cup whole wheat penne pasta
  • Garlic salt
  • Red pepper flakes
  • ½ tsp sea salt
  • Lemon juice
  • Chopped Garlic

Directions

Defrost shrimp. Chop the onion into small pieces. Spray a large pan with Pam Olive Oil cooking spray. Heat onions over high- heat. After approx. 3mins, add sprinkle with garlic salt and red pepper flakes. Let cook for approx. 3 mins. Add shrimp. Sprinkle with additional garlic salt (keeping portions of salt low) and red pepper flakes. Add a decent amount of lemon juice. Turn heat to medium- high until shrimp begin to turn pink. Meanwhile, begin cooking penne according to directions on box- add a touch of sea salt, unless you have a high salt diet! Turn heat, on shrimp pan, down to medium-low and add can of tomatoes- with juice! Add chopped garlic and bring heat back up to medium- high to allow juices to boil. Once the juices are boiling turn the heat off. Place penne in a bowl and spoon shrimp mixture over penne- use a spoon with slits as to not use any of the juice. Pour the remaining juice into a bowl, and that is your sauce! To top it off, place ½ of the laughing cow cheese on top of your serving, mix in with pasta and shrimp mixture and ENJOY!
